After approximately two years on the lees, there are notes of freshly baked bread and pastry that enhances the more fruit forward style of the wine. Finally, after several months on the cork, the wine develops caramel and hazel complexors.

Fresh and easygoing, with aromas of green apple and fennel and crisp, lively citrus, mineral and toasty vanilla flavors that finish on a creamy note. Drink now.

(65% pinot noir and 25% chardonnay): Light, bright gold. Green apple and quinine on the citrus-accented nose. Very dry and nervy on the palate, which offers taut lemon and orchard fruit flavors and a hint of bitter herbs. Slightly pinched on the finish but there's good focus and cut here. This bubbly has a low 2.95 pH, which no doubt contributes to its racy character.
